My Mangaluru Breakup special -Bread Breakfast Recipe

Hey quarantines..  
Appologically blogging after so long here... Just imagine even hawa was not in a mood to post here anything being lazy carrying a second baby bump. Infact..! An isolation from blogging:-).

 Today I have come up with a Bread Breakfast Recipe, BUNS... ofcourse not the the BUN which internationally holds the title, hamburger bun...  yess its a South Indian dish  which in a region,Mangaluru of karnataka  have it for breakfast, which uses banana as its main ingredient.

As we all are in present panademic disaster of quarantine, all are in a mood to inspire their husbands by cooking special foods apart from the usual normal day recipes.  So was I also today fed up of dosas, puttu, bread n cheese, sausages etc... and I also saw my ripe bananas staring at me with grief. I could not imagine me throwing them into my trash the next day as nobody in my house was taking a chance to eat them. I ate one with guilt as people die out of hunger nowadays not having anything to eat for a one day meal, still three are remaining and i just thought of using it somehow. So jumped into Mangaluru Buns.. 

I love them the most as Mangalore is so close to my heart as I spent most of the years there...Truely a place to eat and die.. But as the covid 19 is all over this world, Mangaluru is no more my LOVE since the issues happening over there is so heart breaking.. so this is one of my breakup recipe with Mangalore.

 Coming to our hunger craving Bun now..This  sweet Banana purees are mildly sweet fried bread made with mashed Banana, flour and sugar. This is a good snack or breakfast item which can only be sipped with a cup of tea.


Ingredients

  • 3 medium sized  ripe small bananas
  • 2 to 3 tablespoon sugar
  • 1 pinch salt (optional)
  • 2 pinch baking soda ( I ran out of this ingredient and used one egg white beaten thoroughly to form a foamy solution)
  • 1/2 cup of yogurt
  • 2 cups all purpose flour
  • oil for deep frying

making dough

  • In a bowl, Mash the bananas along with sugar using a fork.
  • The sugar helps in the mashing of the bananas very well. You can also just puree the bananas in a blender and then add sugar.
  • The banana puree is now mixed with half cup yogurt, flour, salt and thoroughly beaten eggs in a blender as I ran out of rising agent baking soda.
  • If you can knead with the yogurt, then fine. If the mixture looks dry, then add 1 tbsp yogurt again and knead. 
  • Knead into a smooth dough. The dough is slightly sticky. 
  • If the dough becomes very sticky, then add some flour accordingly and knead it well into a soft smooth dough.
  • Apply one table spoon of oil over the dough. Keep it  covered in a bowl for 4 to 6 hours in room temperature. Lightly knead the dough the next morning or after you have kept it for 6 hours.

    Frying The Buns
    • Take small to medium sized balls from the dough and roll into round pooris.
    • Slid each poori into medium hot oil and fry the banana pooris till they are puffed and golden. Take care that the banana buns does not break in oil otherwise they soak lot of oil.
    • Remove them with a slotted spoon and drain on paper napkins to remove excess oil.
    • Serve the mangalore buns, hot or warm with a cup  of tea of coffee.
