What with Egg for breakfast?? The best to cook and eat

Heylooo... A short work leave from blogging.. yeah it was a  bit long and my family is here now... Today it's a Breakfast recipe of mine.

So now Its Hawa's life with her in-laws. it is all a tactic routine now. I have to be a superwoman now.. as you all heard a woman should look like a princess and work like a running horse.. sorry I would like to add a disclaimer here...:-) 

Leaving all the jokes and illness aside.. we are six from three now. My mother in law and my two sweet sister in laws.  On 7th April .. we handed them from Abudhabi  International Airport at 11: 45pm. My Mr. Little was so happy to see his Granny and aunts after a big gap of months. And welcomed them so sweetly by singing all the way to our home... I got nice Indian meals for our dinner and I must say my mother in law helped me get rid of a big burden of dinner making that tiresome day.

All were so tired especially them because of the long journey.. Soon we were all wrapped in blankets and my thought ran to a corner... " what should I cook for them". I had only some eggs... So here is my Egg burji... Easy five-minute dish to go with most of the Indian traditional Appams.

I made some Indian rotis and quickly cooked this egg burji...

Ingredients:

Onion
Green chilly
Tomato
Garlic
Curry leaves
Coriander leaves
Egg
Oil
Turmeric powder
Coriander powder
Pepper powder


Method:

Heat a pan with little amount of oil. Fry the garlic cloves and curry leaves. Add green chilly slits and the chopped onions, fry them till golden brown. Add tomatoes, let it fry until oil sets apart. You can add turmeric powder, coriander powder and pepper powder, a little amount of salt.. add 3 to 4 eggs and just stir it continously for 2-3 minutes. coriander leaves garnishes it... DONE. 



This is a very easy to go dish anytime with quick cooking. If you have a lazy morning try cooking this and be pampered by yourself. You can make it less spicy for your kids too... Just cook confident and make your loved ones happy.
